- 1 tablespoon Olive Oil
- 1 pound Italian Sausage (mild or spicy)
- 1 medium Onion, diced (about 1 cup)
- 3 cloves Garlic, minced
- 2 ribs Celery, diced
- 1/2 cup Orzo Pasta (uncooked), or 1 cup larger pasta type
- 6 cups Chicken Broth
- 1 (15-ounce can) Diced Tomatoes, don’t drain
- 1 cup tomato sauce
- 2 (15-ounce can) Cannelini Beans, drained and rinsed
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Black Pepper
- Heat OLIVE OIL in a 4-quart soup pot on medium-high heat.
- Saute SAUSAGE until cooked through. Transfer out of pot and drain excess grease, leaving a small amount for the vegetables.
- Continuing in the same pot, add ONION, CELERY, and GARLIC, and saute until tender.
- Add COOKED SAUSAGE, ORZO, CHICKEN BROTH, DICED TOMATOES (with juice), TOMATO SAUCE, BEANS, ITALIAN SEASONING, SALT, and PEPPER.
- Bring to a boil, then reduce heat to medium-low and simmer 10-15 minutes, or until orzo is cooked through.
